My little amuse-bouche was fish, very puristic.

The grilled fish with lemon and coriander and a touch of spiced cream radiates on the plate.

Indeed, the first bite brings back memories of my upcoming vacation in Bella Italia – which I take as a compliment, because it’s precisely these childhood associations of Elba in 1980 that chefs usually try to conjure up.

But the very next second, the white wine brings me back to the here and now.

After this state of bliss, I try pasta

Yummy.

Followwed by dry-aged beef.

The ingredients mostly come from regional Sardinian and Tuscan producers.

Wow, brutally local.
